Tomato Basil Frittata is a simple and flavorful egg dish that's perfect for breakfast, brunch, or a quick weeknight dinner. The combination of sweet cherry tomatoes, fragrant basil, and Parmesan cheese creates a delightful and satisfying meal.

Ingredients:

  • 6 large eggs

  • 1/2 cup cherry tomatoes, halved

  • 1/4 cup fresh basil leaves, chopped

  • 1/4 cup grated Parmesan cheese

  • Salt and pepper to taste

  • 2 tablespoons olive oil

Instructions:

Preheat your oven to 350F 175C


In a mixing bowl, whisk together the eggs, grated Parmesan cheese, chopped basil, salt, and pepper


Heat the olive oil in an ovenproof skillet over medium heat


Add the halved cherry tomatoes to the skillet and saut for 2-3 minutes until they start to soften


Pour the egg mixture over the tomatoes in the skillet and cook for 2-3 minutes without stirring, allowing the edges to set


Transfer the skillet to the preheated oven and bake for 12-15 minutes or until the frittata is fully set and slightly golden on top


Remove from the oven and let it cool for a few minutes before slicing


Serve your delicious Tomato Basil Frittata warm, garnished with extra fresh basil leaves if desired

Thai Tea Coconut Popsicles

The creamy coconut milk and fragrant Thai tea in these Thai Tea Coconut Popsicles are just the right amount of sweet. You can cool off with them on a hot day; they taste cool and have a hint of exotic flavors.

Ingredients:

  • 1 can 13

  • 5 oz coconut milk

  • 3/4 cup brewed Thai tea, cooled

  • 1/4 cup sweetened condensed milk

  • 1/4 cup granulated sugar

  • 1 teaspoon vanilla extract

  • Pinch of salt

Instructions:

In a bowl, whisk together coconut milk, brewed Thai tea, sweetened condensed milk, granulated sugar, vanilla extract, and a pinch of salt until well combined


Pour the mixture into popsicle molds, leaving a little space at the top for expansion


Insert popsicle sticks into each mold


Freeze for at least 6 hours or until completely set


To remove the popsicles from the molds, briefly run warm water over the outside of the molds to loosen them
