Ingredients:
- 6 large eggs
- 1/2 cup cherry tomatoes, halved
- 1/4 cup fresh basil leaves, chopped
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions:
Preheat your oven to 350F 175C
In a mixing bowl, whisk together the eggs, grated Parmesan cheese, chopped basil, salt, and pepper
Heat the olive oil in an ovenproof skillet over medium heat
Add the halved cherry tomatoes to the skillet and saut for 2-3 minutes until they start to soften
Pour the egg mixture over the tomatoes in the skillet and cook for 2-3 minutes without stirring, allowing the edges to set
Transfer the skillet to the preheated oven and bake for 12-15 minutes or until the frittata is fully set and slightly golden on top
Remove from the oven and let it cool for a few minutes before slicing
