Cozy Chicken & Dumplings

This warm and cozy chicken and dumplings recipe is the best kind of comfort food. It's great for cold nights or whenever you need a warm bowl hug. It has tender chicken, hearty vegetables, and fluffy dumplings.


Ingredients:

  • 1 lb chicken breast, diced

  • 2 cups chicken broth

  • 1 cup water

  • 1 cup diced carrots

  • 1 cup diced celery

  • 1 cup diced onion

  • 2 cloves garlic, minced

  • 1 tsp thyme

  • Salt and pepper to taste

  • 1 cup all-purpose flour

  • 2 tsp baking powder

  • 1/2 tsp salt

  • 1/2 cup milk

  • 2 tbsp butter

Instructions:

In a large pot, combine chicken, chicken broth, water, carrots, celery, onion, garlic, thyme, salt, and pepper


Bring to a boil, then reduce heat and simmer for 20 minutes


While the soup is simmering, prepare the dumplings


In a mixing bowl, combine flour, baking powder, and salt


Stir in milk and melted butter until just combined


Drop spoonfuls of the dumpling batter into the simmering soup


Cover and cook for an additional 10 minutes, or until the dumplings are cooked through


Serve hot, garnished with fresh parsley if desired

    In a separate bowl, whisk together the all-purpose flour, baking soda, and salt

    Scoop tablespoon-sized portions of dough and roll them into balls


    Place the dough balls on the prepared baking sheets


    Use a fork to create a crisscross pattern on each cookie by gently pressing down on the dough balls


    Bake in the preheated oven for about 10-12 minutes, or until the cookies are golden around the edges


    Remove the cookies from the oven and allow them to cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely
